Fried Plantain and Snapper Sandwich with Pikliz

Chef Widza Gustin, former MUNCHIES Test Kitchen intern, is back on her home turf applying a fresh concept to a classic Haitian dish: a banan pezé sandwich with fried red snapper and crunchy pikliz. Widza’s love for Haitian cuisine runs through this recipe, from her homemade epis (seasoning base), to her punchy pikliz she makes with pineapple juice and scotch bonnet peppers.
